A Unique Environment

Our tomatoes are grown within the Torre Guaceto Natural Reserve, located in the province of Brindisi. This area, about 50 meters above sea level, is characterized by alluvial soil that is well-drained and highly fertile. The mild Mediterranean climate year-round contributes to the lush growth of our plants.

Organic Cultivation

Our seeds, carefully preserved from the first harvest of the previous year, are sown in March. The cultivation is carried out without irrigation except for emergency watering, and we only use methods permitted by organic farming regulations for soil fertilization and weed management.

The Harvest: A Careful Process

Manual Harvesting

Our tomatoes are harvested by hand from June to late August. Every morning, they are picked and placed in wooden crates with a maximum capacity of 16 kg. This meticulous harvesting ensures that the tomatoes retain all their freshness and quality.

Transport and Processing

The tomatoes are transported to our facility, located only 12 km away, and processed within a few hours of harvesting. This swift process allows us to preserve all the organoleptic properties of the tomato.

In our artisanal facility, the tomatoes are separated from the stalk, cleaned, and blanched in boiling water for about 5 minutes. The pulp is then separated from the seeds and skin using a sieve, bottled, and pasteurized without any added preservatives.
